French Cuisine: Quiche Lorraine

 

Quiche Lorraine 

Ingredients:

  • 1 pre-made pie crust
  • 6 slices of bacon, diced
  • 1 onion, chopped
  • 1 cup grated Gruyère cheese
  • 3 eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • Salt, pepper, and nutmeg to taste

Instructions:

  • Preheat oven to 375°F (190°C). Place the pie crust in a tart pan and prick the bottom with a fork. Pre-bake for 10 minutes.
  • In a skillet, cook bacon until crisp. Remove and set aside, then sauté onions in the bacon fat until soft.
  • Sprinkle bacon, onions, and cheese evenly over the pie crust. In a bowl, whisk together eggs, cream, milk, salt, pepper, and nutmeg. Pour over the bacon mixture.
  • Bake for 25-30 minutes, or until the quiche is set and golden brown on top.
  • Let cool slightly before slicing. Serve warm or at room temperature, often with a side salad.
