Crêpes Suzette

 

Ingredients for Crêpes

  • 1 cup flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter

 

 

 

Ingredients for Suzette Sauce:

  • 1/4 cup butter
  • 1/4 cup sugar
  • Zest and juice of 1 orange
  • 1/4 cup Grand Marnier or Cointreau (optional)

Instructions:

  • In a bowl, whisk together flour and eggs. Gradually add milk and water, stirring to combine. Add salt and melted butter. Mix until smooth.
  • Heat a lightly oiled pan over medium heat. Pour batter into the pan, using about 1/4 cup for each crêpe. Cook until lightly browned on both sides.
  • In a skillet, melt butter over medium heat. Add sugar, orange zest, and juice, cooking until sugar dissolves. Stir in liqueur if using.
  • Fold crêpes into quarters and add to the sauce in the skillet. Spoon sauce over crêpes and serve immediately, often flamed at the table for a dramatic presentation.
